This unforgettable culinary adventure begins at the meeting point in the Plazoleta of San Pedro, a charming area where the renowned San Pedro Market is located.
Established in 1925, this vibrant market features hundreds of stalls offering an incredible variety of foods, including cheeses, fruits, vegetables, handicrafts, and local menus, among many other items.
The San Pedro Market serves as the main food hub in the city, attracting both tourists and locals every day. Historically, this location was part of the Inca Trail that once led to the Plaza de Armas during the era of the Inca Empire.
Your food tour continues with a short walk to a nearby cooking studio in Cusco’s historic center, just steps from the market. Here, the kitchen will be ready for your authentic Peruvian cooking class.
The class begins with the preparation of a classic Peruvian cocktail, the renowned Pisco Sour. This iconic drink is crafted with Pisco—a grape-based spirit—blended with passion fruit juice.
Guided by a professional chef, you’ll learn how to make a 4-course menu using essential culinary techniques. The journey starts with the first course: a delightful Mashua Cream served with purple corn chips. Mashua, a tuber native to the Andean highlands, is similar to the potato and prized for its nutritional value.
For the second course, you will create three distinct types of ceviche. The first is the classic style prepared with red onion and coriander. The second is an ancestral version using tumbo juice, a fruit from the high jungle of the Andes, similar to passion fruit and rich in vitamin C. The third ceviche features kushuro (Andean algae), tarwi (Andean lupin), and camu camu, delivering a burst of unique flavors.
The third course features a delicious rocoto pepper stuffed with mushrooms and vegetables, accompanied by an organic garden salad and a creamy potato pie. Rocoto is a spicy Andean chili pepper, and for the potato pie, you’ll use three different varieties of potatoes.
After preparing each dish, you’ll have the opportunity to taste your creations and enjoy traditional Peruvian flavors, sharing the experience with fellow participants. You’ll also sample non-alcoholic beverages like Chicha Morada, a sweet drink made from purple corn.
For the fourth course, you’ll delight in desserts made from aromatic and fresh exotic fruits such as lucuma, goldenberries, and cherimoya.
